About the wine
Filip Koletnik has a simple philosophy: he believes that the best things are natural.
The grape itself is perfect and contains everything that is needed for a good, full-bodied wine. Therefore, as little influence as possible is exerted on the process of wine production.
vinification
The ripest and healthiest grapes, matured in biodynamically cultivated vineyards,
are harvested by hand and aged for up to nine months in used 500l tonneau
The wine is fermented on the mash in oak barrels. Only native yeasts are used. The wine then matures for at least 12 months on the fine yeast, also in used oak barrels. Bottling is carried out according to the principle of free fall.
ATIMO wines are neither fined, stabilized with tartar nor filtered. ATIMO is naturally cloudy because it deliberately contains traces of fine yeast.
It is desirable to turn the bottle over before opening to mix the yeast with the wine.
